These healthy lettuce wraps are really worth trying. When you take a bite first you will encounter the crispy salad, then the juices from the tomato and capsicum will explode in your mouth together with the Indian masala and fried paneer. The sauce is also incredible with a wonderful flavor of curry leaves and mustard seeds. And the best of all it is really easy and quick to make. Yield:5 Wraps 1x
200 grams cubed paneer
2 red capsicum, diced
1 tomato, diced
1 tsp whole cumin
1 chopped green chilli
1/8 tsp hing
1/8 tsp turmeric
1 tbs chopped fresh coriander
2 ½ tbs oil
1 cup Greek yoghurt
2 sprigs curry leaves
1 green chilli
½ tsp salt
Chaunce for yoghurt:
1–2 tsp oil
½ tsp mustard seeds
1 red dry chilli, broken in 2
1 sprig curry leaves
How to make the filling:
Heat 1 tbs of oil and fry the paneer until golden brown. Remove the paneer from the pan to a bowl.
In the same pan, heat 1 ½ tbs of oil, toss in 1 tsp of whole cumin and sizzle for a few seconds, then add the chopped green chilli and hing and fry until the green chilli is cooked.
Add the capsicum and fry over medium heat. Once it is half cooked add the tomato, turmeric and salt.
When the vegetables are cooked add the fried paneer and cook it for 1 minute.
Sprinkle 1 tbs of freshly chopped coriander.
How to make the sauce:
Put the Greek yoghurt, curry leaves, chopped green chilli and salt in a grinding jug. Pulse it until the chilli and curry leaves are nicely minced.
In a small frying pan heat 2 tsp oil. Add the mustard seed and let them crack and pop.
Once the popping is reducing add the curry leaves and 1 broken red dry chilli.
Add the chaunce to the yoghurt and the yoghurt sauce is done.
Wash the lettuce leaves and place one by one on a plate.
With a spoon add the filling inside the lettuce and place a few spoons of yoghurt dressing on top.
