This would be the beginning of my love letter to my dragon fruit smoothie! It’s so good and I love it so much!
Dragon fruit is one of my favorite fruits and my totally go-to-fruit here in Indonesia. It’s just something about that gorgeous pink color and that sorbet feeling when you’re eating it.
Dragon fruit itself does not have a very strong taste. It is mild, slightly sweet and tangy, juicy and it has a crunchy texture which can resemble kiwi. It is perfect to eat as it is! However, when it is made alone in smoothies the flavor tends to be very weak. In this edition of dragon fruit smoothie I have brought it to life by mixing it together with honey pineapple, a squeeze of lime and beautifully added cashews and coconut milk for delicious creaminess.

This vegan smoothie is awesome. I really love dragon fruit and I love that beautiful pink color. (It’s just something about pink). Here are some reasons for loving this dragon fruit smoothie recipe:

Vegan smoothie creaminess!
So the creaminess in this dragon fruit smoothie recipe comes from the coconut milk and the grinded cashew nuts. It is a perfect combination for any smoothie as long as you like the tropical taste of coconut. The quickest way to grind the cashew nuts is by grinding them in a small grinder. Grind them by adding water little by little until you have a perfectly creamy consistency. You can check the consistency by placing a little bit of cashew paste between your fingers. If you notice some lumps or pieces, simply grind it again adding a little bit of water if needed until it is smooth.
If you find this to be a headache then you can soak the cashews overnight in the refrigerator, discard the water and blend the cashews together with the other ingredients. I’m always forgetting to soak the cashews, so I always grind them in a small grinding cup before mixing it with all the other ingredients in a normal grinder. (Mmmm…instant creamy vegan smoothie)
The great thing about grinding cashews in a small grinding cup is that you can always have a vegan smoothie with cashew paste whenever you want, without pre-planning or using store bought cashew butter (which is also fine😊) Cashew nuts are also a great source of nutrition and have vitamins such as vitamin K, E and B6 and minerals such as iron, copper, zinc, magnesium, phosphorus and selenium. They also mostly contain unsaturated fat. How great is that!
Safe? Dragon fruit smoothie recipe with raw cashew nuts?
After searching on the internet I found that there is no such thing as truly raw cashew nuts. Cashew nuts have been heat processed in order to remove them from the toxic shells which make our store bought cashews safe to use. The truly raw cashews in shells are the one we should stay away from, but they are usually not sold in our everyday shops.
Benefits of dragon fruit
So dragon fruits are full of nutritional benefits. Some of the benefits of consuming dragon fruits are that they are:
- Great for skin
- Good for cardiovascular health
- Lower blood sugar
- Help with stomach ailments
- Lower cholesterol
- Boosts in immunity
- Source of iron, B-vitamin and folate
They are also rich in antioxidants and have high levels of vitamin C.
Consuming large amounts of dragon fruits can give something called pseudohematuria, which can cause your urine or stool to turn reddish. No need to fear if it happens, it’s temporary and not dangerous. (Happened to be many times. My favorite fruit, lol)
How to make dragon fruit smoothie
This vegan smoothie is so easy to make. Simply cut and freeze the fruits. Soak the cashews overnight or grind them in a small grinder. Next step is just to mix everything together in a blender, and there you go, a beautiful magenta colored dragon fruit smoothie with a delicious tropical taste.
Variations to this dragon fruit smoothie recipe
So this dragon fruit recipe is only one edition of dragon fruit smoothies. The possibilities are many (wanted to say endless, lol). Here are some of the options:
If you don’t like the coconutty taste you can replace the coconut milk with other vegan milk alternatives such as:
- Almond milk.
- Soya milk.
- Rice milk.
- Or any vegan milk or vegan yoghurt of your choice.
If you prefer dairy you can easily replace the coconut milk with plain yoghurt or Greek yoghurt.
If you don’t have honey pineapple or normal pineapple you can replace it with 1 cup of mango. This will give the dragon fruit smoothie a very fresh and tropical taste. Mixing other fruits into the dragon fruit smoothie recipe is also a great option. For more variety try adding fruits and berries such as:
I did that several times, and the taste is great! My personal preference is that no matter which fruits I add to the dragon fruit smoothie I always have either mango or pineapple in it.
Another option is to add your favorite protein powder or greens such as kale to the smoothie to increase the nutritional value.
I’ve added a little bit of raw sugar to this dragon fruit smoothie recipe as I love my smoothies sweet. It can be omitted if you like or replace it with:

Magical Dragon Fruit Smoothie
A beautiful, tropical vegan smoothie made of dragon fruits and pineapple. It’s sweet, exotic and wonderfully creamy from cashew nuts and coconut milk.

1 cup dragon fruit
1 cup honey pineapple or pineapple
1 cup coconut milk
1/2 cup cashew nuts
1 tbs raw sugar
2 tsp lime juice (optional)
- Cut all the fruits and freeze them.
- Soak the cashews overnight in water inside the fride. Discard the water before grinding with the other ingredients.
Instead of soaking the cashew nuts you can grind the cashews immediately inside a small grinding cup. Place the cashews inside the small grinding cup with a little water. Grind and add water little by little until you have a smooth consistency. Check the consistency by rubbing some cashew paste between your fingers. If lumps or pieces are present simply grind the paste again with little more water if needed.
