A beautiful, tropical vegan smoothie made of dragon fruits and pineapple. It’s sweet, exotic and wonderfully creamy from cashew nuts and coconut milk.
1 cup dragon fruit
1 cup honey pineapple or pineapple
1 cup coconut milk
1/2 cup cashew nuts
1 tbs raw sugar
2 tsp lime juice (optional)
Instead of soaking the cashew nuts you can grind the cashews immediately inside a small grinding cup. Place the cashews inside the small grinding cup with a little water. Grind and add water little by little until you have a smooth consistency. Check the consistency by rubbing some cashew paste between your fingers. If lumps or pieces are present simply grind the paste again with little more water if needed.
